Today’s Food For Thought: Eggs

If I had to choose a hand-full of foods to live off of for the rest of my life – eggs would be on the list. I must specify though, these eggs would be from free-range (cage free) chicken, organic and omega-3 fatty acid enriched. Not only are these eggs versatile but they are so good for you. I credit my morning meal of poached eggs to stable blood sugars to kick off the day. I am not only bias with this interpretation – research from the Journal of the American College of Nutrition supports the concept.  Eggs stave off hunger and stabilize blood glucose levels. Win-win situation, yeah?

One last bit of advise I would offer is do not limit the amount of healthy eggs you eat; just do not make them the only food you eat.
