Recipe: Raspberry Oat Protein Bars

Protein-Packed Raspberry Bars

Ingredients:

  • 1 cup frozen raspberries
  • ¼ cup water
  • 1 tbsp chia seeds
  • 4 tbsp Drink Wholesome eggwhite protein
  • ⅓ cup maple syrup – you can modify this for lower sugar options, such as Lakanto Sugar Free Syrup
  • 2 tbsp coconut oil
  • ⅓ cup peanut butter
  • 1 cup oats
  • 1 cup oat flour (or blended oats)

Directions:

  1. In a small saucepan, combine raspberries, chia seeds, and water. Cook over medium heat until bubbling, then simmer for 5–7 minutes. Mash with a fork.
  2. Remove from heat and stir in the Drink Wholesome. Add a splash of water if needed for consistency.
  3. In a medium bowl, mix maple syrup, coconut oil, peanut butter, oats, and oat flour.
  4. Combine about ¾ of this mixture with the raspberry blend and press evenly into a loaf pan. Sprinkle the remaining ¼ on top as a crumble.
  5. Refrigerate until firm, then cut into 6 bars.

Makes 6 bars — about 15g protein each.
