Protein-Packed Raspberry Bars
Ingredients:
- 1 cup frozen raspberries
- ¼ cup water
- 1 tbsp chia seeds
- 4 tbsp Drink Wholesome eggwhite protein
- ⅓ cup maple syrup – you can modify this for lower sugar options, such as Lakanto Sugar Free Syrup
- 2 tbsp coconut oil
- ⅓ cup peanut butter
- 1 cup oats
- 1 cup oat flour (or blended oats)
Directions:
- In a small saucepan, combine raspberries, chia seeds, and water. Cook over medium heat until bubbling, then simmer for 5–7 minutes. Mash with a fork.
- Remove from heat and stir in the Drink Wholesome. Add a splash of water if needed for consistency.
- In a medium bowl, mix maple syrup, coconut oil, peanut butter, oats, and oat flour.
- Combine about ¾ of this mixture with the raspberry blend and press evenly into a loaf pan. Sprinkle the remaining ¼ on top as a crumble.
- Refrigerate until firm, then cut into 6 bars.
Makes 6 bars — about 15g protein each.
