Most of us can confirm we’ve had Brussels sprouts as a side, but how many can confirm they’ve had as the main component of the dish? With freezing pipes in Chicago, my friend came over last evening to cook (and shower) and inspired me with the below recipe. I have also included her version along with other suggested modification. Enjoy!

Paleo Infused Nutrition Sweet and Salty Sprout Dinner

  • 1 1/2 c Brussels sprouts, chopped
  • 2-3 slices of prosciutto
  • 2 Tbsp raisins, organic
  • 1 c cocktail shrimp, no tail
  • 1/2 lemon juice
  • 1/2 yellow onion, diced
  • Salt and pepper to taste

Dice up the prosciutto and place in a hot skillet on medium heat. Simultaneously add the onion. Stir both ingredients until the prosciutto begins to sweat and the onions become translucent (5 minutes should be good). Add the chopped Brussels sprouts and raisins. Add salt and pepper. Continue to saute for 10 minutes.

Plate the cooked ingredients and top with chilled shrimp and fresh lemon juice.
