Peanut Chicken Thai Soup

Wowzers, this was yummy. Better than yummy, this slow cooker meal was simple to make and healthy lunch and dinner option. It did require a lot of chopping, and if you are crunched for time, you can opt for dry seasonings verses fresh/minced.

Ingredients:

  • 2 large chicken breast, cut into bite-sized cubes
  • 1/2 cup of natural, smooth peanut butter
  • 1 medium yellow onion
  • 5 sweet red peppers
  • 1 lb fresh green beans
  • 1 bundle of fresh cilantro
  • 2 tablespoons fresh, minced ginger
  • 3 tablespoons coconut aminos or tamari
  • 1 tablespoons of coconut oil
  • Salt/pepper/crush red pepper to taste

Directions:

  1. Chop the onion, garlic and ginger. Place in the bottom of slowcooker, with setting on high.
  2. Add coconut oil
  3. Layer in
