Wowzers, this was yummy. Better than yummy, this slow cooker meal was simple to make and healthy lunch and dinner option. It did require a lot of chopping, and if you are crunched for time, you can opt for dry seasonings verses fresh/minced.
Ingredients:
- 2 large chicken breast, cut into bite-sized cubes
- 1/2 cup of natural, smooth peanut butter
- 1 medium yellow onion
- 5 sweet red peppers
- 1 lb fresh green beans
- 1 bundle of fresh cilantro
- 2 tablespoons fresh, minced ginger
- 3 tablespoons coconut aminos or tamari
- 1 tablespoons of coconut oil
- Salt/pepper/crush red pepper to taste
Directions:
- Chop the onion, garlic and ginger. Place in the bottom of slowcooker, with setting on high.
