My No Toast, French Toast

I’ve been on a journey of eating as close to a paleo diet/primal diet as possible and have found myself making this delicious and, more importantly, satisfying breakfast daily for myself and often for my fiance. The first time you try this may be an adjustment but I promise you’ll soon grow to love it.

Ingredients:

1/4 cup old fashion oats
1/4 cup water
1 tsp vanilla extract
1/2 Tbsp cinnamon
1/2 tsp ginger
10-15 fresh blueberries
4-5 egg whites

Step 1: portion out the oats and water and cook in the microwave on high for approximately 45 seconds.

Step 2: Remove the cooked oats from the microwave and ensure they look pretty dry. (If they appear soupy reduce the amount of water used in step 1 or and pop them back in to the microwave this time to cook a bit longer.) Now mix in all of the remaining ingredients on hte list and stir with a fork. Place back in the microwave and cook for 2 minutes.

Step 3: Stir and let cool for a few minutes. Also worth noting is that the spices can be increased or reduced depending on your preference. This includes the amount of egg whites/protein. When I am extra hungry or know I won’t eat again for many hours, I’ll load up on the egg whites. Sometimes and often I go overboard on the cinnamon. Enjoy!
