Kelly’s Homemade Grain-Free Granola: A Low-Sugar, Nutrient-Dense Alternative

If you love Purely Elizabeth but want a lower-sugar, cleaner alternative, this homemade granola is for you! It’s packed with nutrient-dense ingredients like almonds, coconut, and pumpkin seeds—offering healthy fats, fiber, and just the right touch of natural sweetness. Plus, it makes for a thoughtful teacher gift around the holidays!

Ingredients:

  • 1 ½ cups almond meal
  • ¾ cup raw pepitas (pumpkin seeds)
  • ¾ cup raw sunflower seeds (no shell)
  • 2 ½ cups raw sliced almonds
  • 1 ½ cups unsweetened coconut flakes
  • ¾ cup coconut oil
  • ½ cup raw honey (adjust for sweetness)
  • 2 tbsp vanilla extract
  • 2 tbsp cinnamon
  • 2 tsp sea salt

Instructions:

1️⃣ Preheat oven to 325°F.
2️⃣ Mix dry ingredients (almond meal, seeds, almonds, coconut, cinnamon, and salt) in a large bowl.
3️⃣ Warm coconut oil, honey, and vanilla in a microwave-safe bowl for 30-45 seconds, then stir.
4️⃣ Combine wet and dry ingredients, mixing until evenly coated.
5️⃣ Spread mixture on a parchment-lined baking sheet and bake for 20-25 minutes, stirring once or twice.
6️⃣ Remove from oven, sprinkle with extra sea salt and cinnamon, and press down to form a flat surface. Let cool for 20 minutes before breaking into chunks.

How to Enjoy:

  • With coconut or almond milk for a satisfying breakfast
  • Mixed into Greek yogurt for a protein boost
  • Paired with fresh berries, sliced apple, or pear for extra fiber
