It’s packed with nutrient-dense ingredients like almonds, coconut, and pumpkin seeds—offering healthy fats, fiber, and just the right touch of natural sweetness. Plus, it makes for a thoughtful teacher gift around the holidays!
Ingredients:
- 1 ½ cups almond meal
- ¾ cup raw pepitas (pumpkin seeds)
- ¾ cup raw sunflower seeds (no shell)
- 2 ½ cups raw sliced almonds
- 1 ½ cups unsweetened coconut flakes
- ¾ cup coconut oil
- ½ cup raw honey (adjust for sweetness)
- 2 tbsp vanilla extract
- 2 tbsp cinnamon
- 2 tsp sea salt
Instructions:
1️⃣ Preheat oven to 325°F.
2️⃣ Mix dry ingredients (almond meal, seeds, almonds, coconut, cinnamon, and salt) in a large bowl.
3️⃣ Warm coconut oil, honey, and vanilla in a microwave-safe bowl for 30-45 seconds, then stir.
4️⃣ Combine wet and dry ingredients, mixing until evenly coated.
5️⃣ Spread mixture on a parchment-lined baking sheet and bake for 20-25 minutes, stirring once or twice.
6️⃣ Remove from oven, sprinkle with extra sea salt and cinnamon, and press down to form a flat surface. Let cool for 20 minutes before breaking into chunks.
