I Don’t Like Pizza

Well, that is not the complete truth…I enjoy the first few bites of a slice of vegetable loaded pizza but 30 minutes later I sense my glucose levels escalating and I feel like I have Mono times two. Pizza is not exactly low-fat nor low carbohydrate, but you can make your za (aka pizza) a bit healthier than the norm. My boyfriend and I managed to do so last week for dinner.

The truth be told – pizza can be healthy and I can sometimes enjoy this traditional Italian pie. And, of course, a nice glass of red wine!

Recipe:
Whole wheat pizza dough (stretched very thin)
Fresh mozzarella
Green peppers
Prosciutto
Basil
Crushed red peppers
Garlic
Diced cherry tomatoes
Fresh spinach
Crushed black pepper
Olive oil
And a touch of amazingness!
