Honoring everyone’s way of eating, I strive and encourage all to eat more vegetables than a vegetarian. Why?
Vegetables and plant fiber is nourishing to the body, metabolism, and satisfies a strong appetite. 

What’s the easiest way to always have vegetables and produce on hand? Source the freezer!
5 Ways To Make Frozen Veggies Taste Great

  1. Sauté, bake/roast, or grill them for better texture & taste. DON’T boil or steam them. That’s how kids learn to hate vegetables!
  2. DON’T place them solo on your plate by themselves. Instead, add them into meals!
  3. Use them in recipes like casseroles, soups & stews. This week I made a chicken “noodle” soup using frozen zucchini and carrot noodles. Yum, yum.
  4. Add salt-fat-acid: A little sea salt + fat (nuts, animal fat, or a generous amount of coconut or avocado oil to help crisp them up) + acid (lemon or vinegar).
  5. Season. Use pre-made dressings, sauces & spice blends. Look at ingredient lists & use the great blends on Thrive Market.

Creative ways I used veggies this week:

  • I used frozen kale in my smoothie.
  • I added defrosted frozen avocado to my turkey gluten-free sandwich.
  • I added zoodles and frozen peas to my soup.
  • I roasted cabbage with some chopped then frozen onion onto a baking sheet with a favorite spice blend + sliced kielbasa.
  • I roasted frozen sliced baby carrot and mixed it into a black rice salad with sun-dried tomato, chopped mint, avocado, and arugula.
